This is a little lap blanket I did for a lady in Thailand . I was very surprised that it didn't cost that much to send her. She received this under 10 days and she Twitter to me to say it arrive. It work out great as the day it arrived it was her birthday. So I was very pleased. I loved doing this one as the colours work well. This was very easy to do. I did it in three steps. firstly I made all the pink and purple flowers. Second step was to join all the flowers together with a Hexagon border white. Third step I added the border with a scallop frill

This was a lovely day . My Daughter Katie was home from Perth, and you have to grab these moments when the whole family are together just to get the one prefect shot. It was also great to have  my side of the family all together,  my mum, dad, brother Mark and his three kids . We haven't been together for a long while so this was a great opportunity to do this.

Wonton and Pork Ball Soup


WONTON AND PORK BALL SOUP





In China, wonton soup is served as a snack, or dim sum, rather than as a soup course during a large meal. However this is a meal in itself. I was very surprised as how easy this was. Now making these wonton's were a little time consuming but the end result was worth it. I will be making a big batch then you can freeze them in meal size pkt, then all you would need to do is make the soup up. The left over meat if you run out of the wraps you can just make theses into little balls and microwave these for around 5 minutes then just drop them into the soup also.  I hate to waste food. 


175g / 6oz pork, not too lean, roughly chopped
50g / 2 oz peeled pawns, finely chopped
5ml / 1 teaspoon light brown sugar
15ml / 1 Tablespoon Chinese rice wine or dry sherry
15ml 1 Tablespoon light soy sauce
5ml / 1 teaspoon chopped spring onions
5ml / 1 teaspoon chopped fresh root ginger
24 ready made wonton wrappers
about 750ml / 1/1/4 3 cups stock ( I used Chicken)
15mls / 1 tablespoon light soy sauce
finely chopped spring onions, to garnish

  1. in a bowl, thoroughly mix the chopped pork and prawns with the sugar, rice wine or sherry, soy sauce, spring onions and ginger. Set aside for 25-30 minutes for the flavors to blend.
  2. Place about 5 ml / 1 teaspoon of the pork mixture in the centre of each wonton wrapper.
  3. Wet the edges of each filled wonton wrappers with a little water and press them together with your fingers to seal. Fold each wonton parcel over.
  4. To cook, bring the stock to a rolling boil in a wok, add the wontons and cook for 4-5 minutes. Season with the soy sauce and add the spring onions.

This was made from Scratch. I will have to admit to not making this. I got home from work one day to find that my husband had cooked up this lovely dish . NO it was not done from a pkt or a takeaway from a Indian takeaway. He made this from scratch and my goodness it was delicious . I would like to share this with you because it was that good . Even better than a brought one.
 
CHICKEN AND MARINADE
1kg Chicken diced
1tsp salt
1 juicy lemon
1 small tub natural unsweetened yoghurt
4 cloves garlic(minced or crushed)
2 cm ginger (minced or crushed)
3/4 tsp chilli powder
2 tsp garam masala
1 tsp turmic
 
BUTTER SAUCE
1can (130g) tomato paste
75mls hot water
2 gloves garlic (mince or crushed)
2cm ginger (mince or crushed)
300mls of fresh cream
1 tsp garam masala
1 tsp ground cumin seeds
3/4 tsp salt
1/2 tsp sugar
1/2 tsp chilli powder
juice of 1/2 lemon
75g butter
fresh coriander chopped
 
METHOD
MARINADE-  In a large bowl add and mix all together the ingredients and marinade for 1 to 2 hours. the longer the better.
 
BUTTER SAUCE
In a measuring jug combine the hot water and tomato paste. In a medium sized sauce pan melt the butter. Add the garlic and ginger and fresh chili. Cook gently for 3-4 minutes. Remove from the heat and add the garam masala, ground cumin seeds, salt, sugar and chili powder. Combine all the ingredients and return to heat for 30 seconds mixing well. Do not over cook this stage as butter and spices will easily burn. Now add the tomato paste mix and fresh cream. Mix all ingredient and heat through to a gentle boil. Then turn  heat to very low for 5 minutes, keep gently mixing and add the lemon juice. Taste wow and adjust seasoning, if required.
 
Adding the chicken
 
Place the chicken mixture into a large colander and drain off excess marinade. Return to original container. Heat the butter sauce to just below boiling and maintain heat at this level. Heat 2 tablespoons of oil in a wide heavy fry pan. When oil is very hot add 1/3 of the chicken and sauté for about 5 minutes, until the chicken is cooked but still tender. All moisture should have evaporated leaving only the chicken and a little oil. Transfer the cooked chicken into the butter sauce and mix . Wipe clean the pan with a paper towels to remove all of the oil  and residue. Repeat the process for the remaining chicken. Ensure that the chicken is cooked in small amounts so that it does pan fry rather than boil in it own juices.
 
Once all the chicken is cooked and in the sauce, taste and readjust if required. If it too thick add a little more cream, or boiled water. If you really love butter add a further 20-30grams and stir in. Transfer to serving dish and sprinkle with fresh coriander . Serve with rice and Naan bread.

Winter Blues

These colours have come together well. At first I didn't like them. The blues were fine they were matching up nicely, it was the pink that I was having trouble with. But the finished product the flowers just bounce out and quite refreshing . feels like spring even though it not.

The lady that received this blanket was so happy . Happy Birthday Fran A beautiful blanket for a beautiful lady.

HEXAGON BLANKET

Purple Hexagon Blanket


I have changed a few things in my blog. I have been trying to create another blog to start showing you all my other passions in life other than food. CRAFTS. I have got my girlfriend to join me on this page now and we will be showing you all our Ta-Dars. You know when you finish something that's pleases you and you want to share it with the world. We hold it up and say tadar look at what I have made. The new blog is not working and since I got this started I changed this to include the crafts . I will start with showing you all, a blanket that I made with the help from another blogger.  www.attic24.typepad.com . She has inspired me to do this blanket.

My friend down the road showed me hers so I have included her blanket just to show the different the colours make.



 
I made this for a lady at work. This blanket took me 2 weeks solid. It started when I was sick and had to have time off work. I know when you are sick you need to stay in bed. But if anyone know me, staying in bed is hard to do1!!!!!!!! My Mum would have killed me if she knew. I was not playing hooky however there was a lot of hooking going on.
 
 
made with 100% Acrylic 8 balls of purple and 2 balls of white 100g  8ply or double knit.

This is to show how different a blanket can look when you change your colours. This looks absolutely beautiful in real life than in this photo.


Friends that help you are great and thanks to Christine showing me the joy of crochet. I am now doing something my Nana Mag's loved to do and I am the only one of her grand children to take after her. Only wish now that she could have seen what I can do.

Problem I have now is there is so much I want to make . I am so hooked on this. So watch this space .
